December 12th is another Firkin Friday!

We're tapping a firkin!! A firkin is a small cask that is traditionally used for serving cask-conditioned, or "real," ale in the British Isles. This type of beer undergoes a secondary fermentation inside the sealed firkin, resulting in natural carbonation and a softer flavor profile compared to force-carbonated beer.
We want to do Real Ale right around here, so regretfully we have to push back the tapping a week, now December 12th,  on our English IPA. The beer needs a little more time for the yeast to do its thing and clean up a little diacetyl, and we respect those yeast. See you all for a pint December 12th!
